WHAT'S HAPPENING
We WILL be open for business as soon as the TTB gets us our license. When we submitted our application, it was only a 31-day delay. On April 7, they changed that to 45 days. We are thinking it is because of the current turmoil happening in DC right now. All the other state licenses depend on the TTB license.
Our Annual Traditional Big Brew day will be delayed this year. We are planning on having a big party at the brewery with two beers being brewed at once: the same one actually but one version on the "pilot" system (aka our homebrew rig), and one done on our new 10BBL system. Both beers will be on tap in the brewery to taste side-by-side.
The signs are coming! These will certainly help people find us. There are three in this set. All of them look like roadside signs and are in keeping with the theme. Most signage on the hill is fairly black-and-white so these will really stand out!
WAITING ON LICENSING
Toll Bridge's products are high quality, easy-drinking, and “Fiendishly Good.” Our initial product portfolio contains approximately fourteen (14) products, with the main focus on our Belgian styles. We are currently developing a small portfolio of unique beers containing bread with freshly milled flours, our homage to the importance of bread as both foodstuff and ancient brewing ingredient.
We are also developing several non-alcoholic beverages as well for our non-drinking friends.
Belgian-style Blond
Belgian-style blonde ale with a low but pleasing hop bitterness and low malt aroma that has a spiced and sometimes fruity ester character. It is medium in sweetness and not as bitter as its sibling. It is balanced between light sweetness, spice, and low to medium fruity ester flavors.
7.0% ABV • 28 IBU
Abbey-style Single
Abbey-style single. Its name is French, meaning “six lanes.” The beer is a slightly sweet blonde ale, with the typical fruitiness of Belgian yeast. Not-so-typical (but not IPA) hoppiness finishes this refreshingly bright Belgian-inspired Abbey-style single.
6.0% ABV • 40 IBU
Belgian-style Dubbel with Bread
Belgian-style dubbel with a malty sweetness and cocoa and caramel aromas and flavors. Its hop bitterness is medium-low to medium. Yeast-generated fruity esters (especially banana) are balanced by extended lagering times. Bread using freshly milled heirloom wheat contributes a unique spicy character and a smoother mouthfeel.
8.3% ABV • 26 IBU
Belgian-style Tripel
Belgian-style tripel with a mild spicy flavor and a yeast-driven complexity. This one is on the higher end of the ABV spectrum, yet is very approachable to many different palates.
9.2% ABV • 39 IBU
Saison with Apricot [seasonal]
Belgian-style saison with some yeast character and high carbonation, a slight Brettanomyces/lactic character, and fruity aromas and flavors. Apricot puree is added to enhance the fruity characteristics of the yeast.
5.8% ABV • 22 IBU
Belgian-style Golden Strong Ale
Belgian-style golden strong ale, the pilsner of Belgium. It has the traditional characteristic spiciness from the Belgian yeast and a highly attenuated, dry finish.
9.5% ABV • 26 IBU
Belgian-inspired IPA
"Belgian" IPA with a heavenly taste, slightly aromatic and refreshingly fruity due to the use of four hop varieties. The yeast lends a nice spiciness reminiscent of our Teuflisch Golden Strong Ale.
7% ABV • 61 IBU
Classic American Pilsner
A delicious historical reproduction of the Classic American Pilsner, this pilsner has a beautiful, full, golden color and a long-lasting, thick, creamy head. Its full flavor, with modest maltiness, is bolstered by the subtle sweetness of corn. The beer's yeast character is balanced by a well-defined hop bitterness. It has a long, clean, subtly bitter finish.
5.5% ABV • 42 IBU
Seasonal Porters
A robust porter featuring a bitter and roasted malt flavor reminiscent of cocoa. Its caramel and malty sweetness balances with the sharp bitterness of black malt. The hop bitterness is evident and some diacetyl is present at very low levels. The twist? A seasonal “Pumpernickel Porter” brewed with a Bavarian-style 100% rye bread made from freshly milled grain.
6.2% ABV • 40 IBU
Flagship Rye IPA
A Rye IPA, this beer is decidedly hoppy without being overly bitter. This is definitely a true Northwest IPA with the addition of a significant amount of rye malt. The balance is hop-forward, with a clean fermentation profile, dry finish, and clean, supporting malt flavors, allowing a creative range of hop character to shine through. It is drier and spicier than typical IPAs.
7.5% ABV • 88 IBU
West Coast IPA
Inspired by a brewery in Waimea, HI, and Kirkland, WA, this traditional West Coast IPA is characterized by a balanced floral, fruity hop character. The IPA is all about hop flavor, aroma and a moderate bitterness.
7.6% ABV • 67 IBU
German-Style Black Lager
German-style Schwarzbier, or black lager. It is drier, darker and more roast-oriented than the dubbel. It has a nice, surprisingly pale-colored foam head and a mild roasted malt character without the associated bitterness. Its malt flavor and aroma is at low to medium levels of sweetness.
4.5% ABV • 40 IBU
Seasonal
Also called a “hellerbock” (meaning “lighter bock”), this German-style Maibock has a dominant malt-rich profile with lightly toasted and bready malt character with a pleasant caramel finish. Watch for our roasted habanero-infused seasonal!
8.0% ABV • 41 IBU
Scottish-style Wee-Heavy [seasonal]
Strong Scotch Ale with fruity, malty aromas leading to plummy vanilla flavors, finishing with a touch of oaky earthiness which nicely balances the dark malt nuttiness. One sip and you will not want to share it!
9.0% ABV • 38 IBU
Flight or Pint
This ginger ale "flight" features three different ginger syrups: fresh ginger, fresh galangal, and a house blend. Blend your own or have a pint of the house blend.
