TREVOR TALKS

No More Emails From Teri! On Tuesday, April 1, we became the proud owners of a brewery. A big one: 10BBL in Woodinville, WA. While the brewhouse is fairly large, the taproom and pub are are not so much. We have to do a fair bit of reworking to make things usable/comfy, like build a bar and and barstools for regulars... assuming there will be any!
But this means that there will be no more brewdays at the house. It also means no more emails from my Uglyboxes account! The mailing list will now be sent from the official Toll Bridge Brewing Company email! It is way cool to be able to say that!
Many people responded positively to the email. If you would like to see the comments, click on the link on the side. Fair warning. I edited some of them to remove some more personal content, missing words, and/or added punctuation. You know, moderator-type stuff. 😜

And here we are. Prepping for opening the best we can.
As you can see, we have a new layout for the blog! We are now going to be doing things a little differently. While we will have a live, invite-only chat channel, Bluesky, and the blog, some of the news will be announced on the website front page, but only the top three big NEWS items for the week will go there.
Here is where all the past articles will be linked. That means even EVERYTHING from the old "What's Brewin' Bellevue" blog we used to write between 2008 and 2010 to the last three years of heartache.
As you can see one of the changes I made here is to add some comments to the articles. They will be vetted and edited for content. If you want to comment on an article here, email me. If you want to comment on Bluesky instead, that is perfectly fine -- even encouraged!
Of course, my PREFERRED way of talking to you would be to have you come into the pub and comment in person over a pint, but that is me!

SLOWLY coming together! Almost too slowly.
You will note that our WSLCB and TTB endorsements are not on the license yet. They are pending according to the website. The state and city decided to issue it anyway for some reason, maybe so we could buy swag and not get taxed? Too late!
We haven't been able to figure out how to get the resellers' permit on their website either.

2025OH MY!
Our list of things to do before we open is getting shorter. We have ordered three types of glassware, got our magnets, our wayfinding signs are almost complete, our tap handles are designed (couldn't get the ones we wanted because of tariffs) and we have the backups, ordered our toll tokens and more pins, totes are on their way, coasters are printing, the new premium bar stools are in place, and all the cushions for both the chairs and the metal stools are ordered. OH! and the bathroom is painted and almost finished --- I only have the baseboards and trim to do yet.
All we have left is to build the bar and for me to rent/borrow a scissor lift or scaffolding to paint the 14ft walls, and for us to figure out the TV-menuing situation. And once we get the reseller's permit, we will put in the big order on the clothing.
This is all stuff to do in the meantime while we WAIT for the government to finish their background checks.

2025And off the Bridge again!
Seems like one step forward, two back. Or better yet... we keep getting knocked off the bridge by a freaking goat. This past week, while we were working on the brewery, I got a email about setting up an interview with the LCB. We were a little confused because we didn't apply (Keith remembered the State automatically does when you get your business license) since we didn't have our TTB license yet. I sent off a reply, figuring that we could at least get her some of the information and have file while we wait.
She called a day later... apparently someone cancelled and we were next on her list. I was at Costco filling the truck! Then things got more weird. She asked why we applied without the TTB and noted that we didn't pay any of the fees. I said we didn't apply.
So we had a very interesting conversation! Mostly about how the TTB is taking over 90-days despite what they say on their website. She told me of her last client who just got his license two weeks ago and he applied in January! She said they used to continue the process concurrently, but can't do it anymore since the Feds are taking so very long. We had to withdraw the application. She did say that we could just call or email and restart it easily, but still.
More wasted time. At least the brewery will look amazing, no?
June 6, 2025
Today at noon, we had our interview with Michael at the WSLCB. There was a lot to go through for us I guess, what was supposed to be "twenty" minutes, turned into forty. Tons more paperwork to upload and both Keith and I have to have accounts. Also, it is looking like we are now not going to be opening until August. I guess our anniversary is as good a time as any to have an opening party...

SWAG!
Official SWAG has arrived! We have 5000 coasters (because they will be used and people will take them) and recycled grain-bag totes! The totes are going to be for sale for $25. And the magnets are $1. We are waiting on the glassware. They should be arriving towards the end of the month.
They are all wickedly cool!

2025FREAKING NINE AND A HALF WEEKS?!
Okay... we applied on May 22. We waited and waited. Stressing for all that time. Everyone was wondering WTF, including the WSLCB.
Then, Keith found a phone number hidden on the TTB website. I called it on May 20. The woman told me that "oh, someone is looking at your application today in fact!" We didn't believe her.
I woke up to an email from the TTB that was dated May 21, at 6:36am requesting clarification on our LLC titles. We had listed ourselves as owners, and the agent suggested members. He said he could change it. After checking with our attorney Jared, I sent off an email before I went to massage asking him to change it.
An hour later, we had our license. It took only a FREAKING HOUR! 😒

2025ANND... speaking of taking forever...
On the main page we were showing pictures of the taproom and beer garden. Pictures we sent the state liquior control board. They informed us later, that they were going to restart in-person inspections! Oh, joy. No matter... the place was looking great!
After meeting with our investigator and having a great chat, it took another four days to get our license. Again, another snafu where there was supposed to be an "instantaneous trigger" when we paid the remaining balance. GAH!
BUT on July 29, 2025 we were approved and on Mom's birthday, August 1, we got our official license. 😒
by TERI September,
2025WHAT? We can't use our glasses?
Oh for the love of... no... according to King County Health... we cannot use our glassware until we get inspected and issued our health permit to show that we are capable of hand-washing them "properly." Until then, plastic cups!
I am sure you are all getting sick of this face.😒
by TERI September 16, 2025WHEN ARE YOU OPEN?
We are pleased to announce that since getting our license on August 1, we have successfully put 4 beers into the 10BBL tanks!
Breakdown Pale Ale (in kegs and in the cooler)
Jimmy Classic American Pilsner (kegging soon)
Raspberry Wit (kegging soon)
Apricot Saison
🥳
We are planning a soft-opening, an industry opening, and then the proper opening September 26. Evan over at Watts graciously offered to help with some brewing to get us up and running. We have yet to figure out which beers we might want to pass off. But it is a great idea!
The date unfortunately falls on Watts Brewing's anniversary as well, so why not make a crawl out of it? There are several great breweries in our area! Visit all of us!
Many of you may know my story… my run in with the three old goats who wanted to get to the other side of the water to eat and fatten themselves up. I used to own that bridge they wanted to cross. They played dirty and one day, I found myself knocked into the water being carried away by the current.
It was then that I decided to do something that even they wouldn't take from me.
I decided to make beer.
Now, no one runs from me!
